Brown Rice Salad with Soy Dressing

1 1/2 cups brown rice, cooked
420g canned soya beans, drained and rinsed
2 carrots, peeled, halved lengthways & sliced
100g snow peas, trimmed, cut into strips
100g baby corn, thinly sliced
2 tbsp Sempio soysauce 501S
2 tsp Sesame oil
2 tsp garlic, crushed
1 ginger, peeled, finely grated
1/4 tsp Wasabi paste (optional)
1/4 cup flat-leaf parsley leaves to serve
Directions
1. Place cooked rice into a large bowl.
2. Add soya beans, carrot, peas and corn.
3. Whisk soy sauce, sesame oil, garlic, ginger and wasabi in a jug until well combined.
4. Season with salt and pepper.
5. Pour dressing over salad. Toss gently to combine. Sprinkle with parsley and serve.
