Dwaejigogi Kimchi Jjigae

Pork and Kimchi Stew
300g Kimchi
150g Pork Shoulder
1 Tbsp Yondu, Orange Label
1 ea Shiitake Mushroom
1/2 ea Red Chili Pepper
1/3 ea Scallion
3 Cups Water
1/2 Cup Kimchi juice
(Squeezed from kimchi)
1 Tbsp Sesame Oil
1/2 Tsp Salt
1/3 Tsp Pepper Powder

1. Slice Kimchi into 1-inch lengths and cut pork shoulder into bite-sized pieces.
2. Cut scallion, red pepper chili, and shiitake mushroom into thin slices.

3. Drizzle oil in a pre-heated pot and stir-fry pork. Add Kimchi and Yondu, continue to stir fry until kimchi is softened.

4. Add water and kimchi juice, then cover pan. Bring to a boil, remove lid and reduce heat to low.
    Cook for an additional 20 minutes.
5. Add sliced mushroom and vegetables, then cook for 5 more minutes. Season with salt and pepper.
